Oven roasted brussel sprouts have an amazing rustic and comforting taste. They are crispy on the outside, and perfectly crunchy on the inside. They are perfectly caramelized and slightly sweet, and savory. Roasted brussel sprouts are an excellent side dish for any meaty type dish such as steak, turkey, chicken, or ham. They act as a wonderful companion to creamy béchamel dishes. It is a tremendous side dish to many dishes, and is perfect for any holiday or any regular day.

The steps are super simple, and the baking time is fairly minimal.
INGREDIENTS YOU’LL NEED
I don’t think the list of ingredients for this brussel sprout recipe could get any shorter. I am afraid that if it did, this recipe wouldn’t be a recipe, but an ingredient.
- Fresh brussel sprouts, make sure to choose the freshest brussel sprouts to get the best taste out of them. Brussel sprouts that have been sitting in the fridge for too long will not give you the best texture, and they might come out sort of on the soggy, or super dry side.
- Extra virgin olive oil, because this is a recipe with very few ingredients, you’ll want to choose the best type of ingredients to make it shine. Choose a good quality extra virgin olive oil as this will bring an immense flavor to the brussel sprouts.
- Salt, you could use table salt, but why not use kosher salt, sea salt, or pink Himalayan salt, and make this recipe extra fun.
- Black pepper, If you know me, you probably know by now that I will always go for the freshly cracked black pepper unless I was totally out of it. Even if I have a baby on my hip, I will find a way to crack that pepper. Freshly cracked pepper tastes so much butter than the pre-cracked stuff in my personal, humble opinion.
- Cayenne pepper (optional), I do not put cayenne pepper in our roasted brussel sprouts because my little minions might not eat it. Since I am trying my best to have them eat healthy, I will, to the best of my ability, avoid certain things that will stop them from eating the said healthy food. You, however, are free to add cayenne pepper to your roasted brussel sprouts. The cayenne pepper will add another magnificent layer of flavor to them.
UTENSILS YOU’LL NEED
- Cast iron skillet, this is what will give you those perfectly crispy and delicious brussel sprouts with the caramelized flavor. Cast iron will also add a depth of flavor to the brussel sprouts that no other skillet can do. It is not to say that you can’t use any other type of skillet, but I highly advise you to use a cast Iron skillet. You will not regret it.
- Sharp knife
- Cutting board
- Medium bowl
PREPARING THE BRUSSEL SPROUTS
Before you begin, you’ll want to preheat your cast iron skillet in the oven as soon as you turn on your oven. This will allow it to come to temperature at the same rate of the oven. If you do not preheat the skillet, the brussel sprouts will end up sticking to it.
Remove any damaged leaves off the brussel sprouts. Cut them in half length wise.
Transfer them to a medium bowl. Add enough olive oil to coat every single piece of the brussel sprouts. This is what will help them get that crispy texture.
Sprinkle some salt, freshly ground black pepper, and cayenne pepper if you are using it. Give them a quick toss and transfer them to a preheated cast iron skillet.
How to Cook Brussel Sprouts in the Oven
When you do transfer them to the cast iron skillet, you’ll want the cut side of the brussel sprouts to be facing the cast iron skillet. This will ensure that the brussel sprouts get crispy, and will allow them to get that caramelization that we are looking for.
Now, all you have to do is immediately transfer them into the preheated oven and allow them to bake for around 30 minutes. The baking time will vary according to your oven. Just make sure that wen you pull them out of the oven, they have a little bit of a chard appearance to them.

Oven Roasted Brussel Sprouts
Equipment
- Cast iron skillet
- Sharp knife
- Cutting board
- Medium bowl
Ingredients
- 1 pound brussel sprouts
- Extra virgin olive oil
- Salt to taste
- Black pepper to taste
- Cayenne pepper to taste optional
Instructions
- Place cast iron skillet in the oven on lower rack. Preheat oven and cast-iron skillet to 400 F.
- Cut the ends off the brussel sprouts, then cut each brussel sprout in half the long way.
- Add the brussel sprouts into a medium bowl. Drizzle some extra virgin olive oil over them. Sprinkle with some salt and pepper to taste and give them a quick mix. Make sure that every piece of brussel sprout is coated with oil.
- Place the brussel sprouts onto the preheated cast iron skillet. Arrange them so that each brussel sprout half is touching the hot cast-iron pan.
- Place into the oven on lower rack and bake for 30 minutes.
- Remove from oven. Drizzle with about a couple teaspoons of extra virgin olive oil. Serve as a side dish with roasted turkey, chicken, steak, or anything you can imagine.
