Equipment

  • Small spoon for mixing
  • Small microwave safe plate

Ingredients
  

  • 2 tablespoons dark chocolate chips
  • ¼ cup Chantal's all-purpose gluten free flour blend
  • ¼ cup sugar
  • 2 tablespoons unsweetened cocoa powder
  • 1/8 teaspoon salt
  • 1/8 teaspoon baking soda
  • ¼ teaspoon vanilla extract
  • 2 tablespoons boiling water
  • 3 tablespoons warm milk
  • 2 tablespoons vegetable oil or melted coconut oil

Instructions
 

  • Add in all the dry ingredients into a large microwave safe mug, except for the dark chocolate chips. Mix to combine.
  • Add in the boiling water, warm milk, and vanilla, and mix well to remove any clumps.
  • Add in the oil, and mix, until well incorporated.
  • Place the chocolate chips into the center of the mixture, and give it a gentile stir. You can sprinkle a bit more on top if you would like.
  • Place the mug onto a microwave safe plate, and place it into the microwave. The plate is there to catch any spilling that might occur.
  • Microwave on high for 1 minute and 30 seconds to 1 minute and 45 seconds.
  • Serve warm or cold

Notes

Check your microwave wattage before you proceed with the microwaving process. Every microwave is different. Microwaves with higher wattages tend to cook the food a lot faster than those with lower wattages. Our microwave is 1100 W output which is the energy used to cook the food. At that energy level, I cook the mug cake for 1 minute and 30 seconds.
