This oat groats recipe is super creamy and delicious. It is super healthy, and it is one of the best winter recipes. It is definitely a comfort food especially on those cold winter nights. Back when I lived at my parentโs house, my mom would always make 2 giant pots of this dish, and I would be there to stir it every now and then for her. However, they were not made with oat groats. Instead it was made with wheat.
WHEAT BERRIES AND BARLEY REPLACEMENT
This dish is a very traditional Mediterranean dish that is cooked in almost every household in Lebanon. This was one of my favorite Lebanese dishes. However, after I broke up my friendship with wheat and we became enemies, I still loved this dish, but did not love what it did to me.
Since then, Iโve been trying to find the perfect replacement for wheat to make a gluten free version to what is know as harissa โ harisseh (it all depends on the pronunciation), or what we call here chicken or beef oat groats stew.
I finally found it.
I tried brown rice, and I was not very pleased with the taste or the consistency that it had provided. Donโt get me wrong. It tasted good with the brown rice, but it was not what I was looking for. It did not provide me with the taste and texture that I was used to.
After many years of searching I stumbled on oat groats, and they were the best substitute for wheat and barley that I have been searching for. Oat groats provide a very similar texture to that of the wheat berries, and they provided me with the same creaminess that I was looking for.
A friendly warning, not all oat groats are gluten-free. Some oat groats are processed in factories that process both wheat and non wheat products. Make sure that it states โgluten-freeโ on the packaging before you purchase it.

BEST MEAT TO USE IN OAT GROATS STEW
My favorite meat to use is chicken legs. If you are making a giant pot of this recipe, boil down a whole chicken, debone it, strain the chicken broth, and add in the oat groats and rest of the ingredients, and follow the same steps listed in the printable recipe.
But, if you are making a small amount, preboil 4 chicken thighs and follow the same directions.
I also like to salt the meat several minutes before I begin the cooking process. Salting the beef or chicken helps in tenderizing the meat, reducing the cooking time in the process.
HOW MUCH WATER SHOULD YOU ADD
I specifically do not list the exact amount of water needed because it all depends on your preferred consistency. Some people like a thick consistency, and some like it more runny. I tend to like it a bit more runny.
Just remember to add in the water a little at a time. This will allow you to achieve the exact consistency that youโre after. If you add in too much water from the beginning and you like a thick consistency, you will not be able to take that water out. You will have to wait until the oats thicken the stew again, but that also means that the oats will lose that bite that they have, and they will become more mushy.
HOW LONG SHOULD YOU COOK THE STEW
It depends. Do you like it super creamy? do you like it mushy? do you like it to still have a bite to it, kind of al-dente like?
It really all depends on how you like it. My preferred amount of time to cook this oat groats stew is for 1 and a half hours. This length of time allows for the oats to become creamy, but still have an al-dente feel to them.
If you are using beef and you want the beef to sort of disappear into the dish, youโll want to brown it and boil it for about an hour before you add in the oat groats. Make sure to add in the seasoning in with the beef as you cook it to ensure that it is well flavored.

Equipment
- Large heavy bottom stockpot
- Mortar and pestle
- Chopping board
- Sharp knife
- Wooden Spoon
- Measuring cups

Ingredientsย ย
- 1 pound chuck roast beef sliced into bite size cubes or 4 chicken thighs
- 3 cups gluten free oat groats rinsed and drained
- Salt to taste
- 2 to 3 tablespoons oil of choice
- 2 bay leaves
- 1-2 cardamom pods opened and crushed
- 1 tablespoon ground cinnamon
- Black pepper to taste
- 6 cups water. Add more as necessary
Instructionsย
- Into a heavy bottom stock pot, add 2 to 3 tablespoons of extra virgin olive oil or oil of choice. Preheat on medium heat until oil is glistening.
- Add the meat into the stockpot and brown on medium heat.
- Add oat groats in with the browned meat and stir fry for 1 minute and 30 seconds.
- Add the 6 cups of water and deglaze the pot.
- Add in the salt and spices. Stir and bring to a boil.
- Reduce heat to medium low and cover. Continue to monitor the stew about every 5 minutes as it cooks.
- You will need to stir it every 5 to 10 minutes to make sure there is nothing stuck to the bottom.
- As the stew thickens, continue to add a little water at a time to achieve the desired consistency. Cook for 1 and a half to 2 hours, or longer if desired. Make sure to keep adding water to the stew as it cooks to prevent it from burning and to end up with a creamy texture. Adjust seasoning as you go.
