This salmon in the oven with soy sauce recipe is definitely a crowd pleaser. Everyone in our family loves this dish even those who do not like fish. Salmon filets are marinated with soy sauce, brown sugar, minced garlic, olive oil, and spices. Then they are baked to perfection in the oven. It is savory with a slight hint of sweetness. Perfect for a healthy dinner, or for when you have friends over for dinner.
I can’t tell you enough how much I love this recipe. I do have to mention though that I love seafood, but this recipe wins even my pickiest eaters, and my husband and son who don’t normally love fish, LOVE this recipe.
You can prepare it in the blink of an eye, almost… Perhaps it might take you a few more blinks before you’re done preparing it. But seriously, it couldn’t get any easier!
Plus there is no frying, so no stove top to clean! Yay! And the cooking time is so quick.
Here are the ingredients that you are going to need.
Ingredients
- Salmon fillets
- Freshly grated ginger
- Freshly cracked black pepper
- Brown sugar
- Parsley
- Minced garlic
- Diced jalapeno (optional)
- Extra virgin olive oil
- Soy sauce
- Some freshly chopped cilantro for garnish (optional, but recommended)
And here are the utensils that you will be needing. They are not many, but it sure makes it a lot easier to have everything ready before you start the cooking process. This will prevent a lot of frustration. Speaking from experience here.

SALMON IN THE OVEN MARINADE PREP
SPICES
For the ginger, you can either use fresh or ground ginger. If you are using fresh ginger you will need about 1 teaspoon. If you are using dry ground ginger, you will need 1/2 a teaspoon.
Pre-ground, or freshly ground black pepper? I say freshly ground is always better because fresh ingredients are always better in my humble personal opinion. But if you don’t have a pepper grinder, you can use the pre-ground stuff. I am sure it will still taste great. Maybe not as good, but still great.
Use either the pre-minced garlic, or freshly minced garlic. I used the pre-minced garlic since that’s all I had on hand.
HERBS
The diced jalapeno is just another added flavor to give the recipe a bit of a spicy kick, but if you are not a fan of spicy food, you can skip it. Most of the time I make it without the jalapeno for the sake of my kids.
For the cilantro, this is just a garnish ingredient. I personally do not like the flavor of cooked cilantro, but I love it when it is in its raw form. I find that it adds another layer of flavor to this dish, and it brightens up the flavor, but if you are not a cilantro fan, you can skip it altogether.
If you choose to, you can add it directly to the marinade, but I personally have never done it this way.
I always used dried parsley in this recipe. I have never tried using fresh parsley. If you want to substitute fresh parsley for ground parsley, you will need 3 tablespoons of fresh parsley per 1 tablespoon of dried according to google.
LIQUIDS
Use extra virgin olive oil because it’s flavor is superior to the regular olive oil. A good quality olive oil also makes a big difference in taste. You don’t have to go for the most expensive olive oil out there, but somewhere in the medium level should be good enough.
You can use gluten free soy sauce, or liquid amino which is my favorite alternative to soy sauce, and I use it all the time in place of regular soy sauce.
MARINATING TECHNIQUE
Now all you need to do is to combine all these ingredients together in a glass baking dish. Stir well, until the sugar is dissolved.
If the salmon filets are with skin and you intend to keep the skin on them, you can place the exposed part of the salmon directly onto the marinade, but make sure to dip the skin in a little of the marinade as well to give it some flavor.
If you are using skinless salmon fillet, you will need to place each salmon fillet in contact with the marinade. Marinade one side for 10 minutes, then flip the fillets to the opposite side, and marinade that side for 10 minutes also. So that is 20 minutes in total for the marinating process.
You can marinade the salmon in the fridge to ensure food safety, but if you are doing that, you might want to marinade it in a resealable plastic bag because you do not want to put a cold glass bakeware into a hot oven. This will cause it to brake.
Marinating the salmon will ensure that all this delicious flavor penetrates deep into the salmon fillets, and make them extra good. It will also give them extra moisture.
PREPARING THE SIDE DISHES
While the fish is being marinated, you can work on preparing the side dishes.
I like to serve this soy sauce salmon recipe with some mixed green berry salad, some cooked rice, and maybe some stir-fried broccoli, or roasted asparagus.

Now is also the time to preheat your oven to 400 F.
HOW TO BAKE SALMON IN THE OVEN
All that is left to do is to bake the salmon. If you have marinated it in the glass baking dish, you can place it directly into the oven on the bottom rack, at 400 F. Bake it for 10 minutes and it is done! Seriously, Could it get any easier?!
If you marinated your salmon in a resealable plastic bag, you will need to arrange the salmon fillet on the baking dish, making sure that there is no overlap in the salmon fillets. Cover them with the marinade, and place it into the preheated oven to bake for 10 minutes.
You will know that the salmon is done if you see a white substance appear on the surface of the fish, or if it flakes easily with a fork.

- 2 pounds salmon fillets
- 1 teaspoon freshly grated ginger
- ½ teaspoon freshly cracked black pepper
- 3 packed tablespoons brown sugar
- 1 tablespoon parsley
- 1 tablespoon minced garlic
- 1 diced jalapeno optional
- ¼ cup olive oil
- ½ cup soy sauce
- Some freshly chopped cilantro for garnish optional, but recommended
Instructions
- Preheat oven to 400 F
- Into a glass baking dish, add in the 1 teaspoon freshly grated ginger, ½ teaspoon freshly cracked black pepper, 3 tablespoons brown sugar, 1 tablespoon parsley, 1 tablespoon minced garlic, diced jalapeno (optional), ¼ cup olive, and ½ cup soy sauce.
- Give all these ingredients a quick mix.
- Spread out the salmon fillets into the baking dish. Make sure that each salmon fillet gets contact with this delicious marinade.
- Marinade salmon for 10 minutes on each side.
- Place the baking dish into the bottom rack of a preheated oven. Bake for 10 minutes. You can tell that the salmon is done when it flakes easily with a fork, or if you see a white substance on the surface of the salmon fillets.
- Garnish with freshly chopped cilantro, and serve.
