Mediterranean Eggplant Stew With Chickpeas is one of the Lebanese/Mediterranean comfort foods. Traditionally it is served with Lebanese peta bread, and some fresh veggies on the side. My favorite fresh vegetable to serve with this dish is Italian sweet or spicy green peppers along with some fresh onions.

Gluten Free Laban Immo (Mediterranean Yogurt Stew)
This dish is one of my favorite dishes of all times. After stuffed grape leaves that is. This is also my daughterโs favorite dish. She could eat this all week long without complaining, and then ask for it again after she had finished the entire stew by herself. You could use lactose free yogurt for this recipe. I make my own lactose free yogurt by using lactose free, but not dairy free milk. I have never tried it with dairy free yogurt, but I guess there is always something new to experiment with. Who knows, maybe one day I will.
The Best Cauliflower Hummus
Cauliflower hummus is made with roasted cauliflower which makes it extra flavorful. It is lower in carbs than the traditional hummus, but taste amazing if not even better than the traditional hummus, in my opinion.
Lentil Soup
This lentil soup recipe is thousands of years old. It is even mentioned in the Bible, the time when Esau sold his birthright to his brother Jacob for a bowl of lentil soup. Even though it is not the most famous dish in Lebanese cuisine, it has been famous in its own right all throughout history. I hope you will like it as much as Esau did, but donโt sell your birthright!
