These Gluten Free Mediterranean date cookies, also known as Easter cookies or maamoul, are so decadent. They are traditionally served on Easter, hence the name Easter cookies. Gluten Free Laban Immo (Mediterranean Yogurt Stew)

This dish is one of my favorite dishes of all times. After stuffed grape leaves that is. This is also my daughterโ€™s favorite dish. She could eat this all week long without complaining, and then ask for it again after she had finished the entire stew by herself. You could use lactose free yogurt for this recipe. I make my own lactose free yogurt by using lactose free, but not dairy free milk. I have never tried it with dairy free yogurt, but I guess there is always something new to experiment with. Who knows, maybe one day I will.

Vegan Stuffed Swiss chard Rolls (Mahshi selek)

This recipe requires a lot of steps. It is not the quickest recipe. It is somewhat easy however, but it is absolutely worth it. It is a great comfort food, or for when youโ€™re craving that filling vegetarian recipe that your body needs. It is packed with protein and healthy vegetables. It is a great wellness recipe, or if you are trying to lose weight.

Lentil Soup

This lentil soup recipe is thousands of years old. It is even mentioned in the Bible, the time when Esau sold his birthright to his brother Jacob for a bowl of lentil soup. Even though it is not the most famous dish in Lebanese cuisine, it has been famous in its own right all throughout history. I hope you will like it as much as Esau did, but donโ€™t sell your birthright!

Gluten Free Sfeeha or Lahm Bi Ajeen โ€“ Gluten Free Mediterranean Meat Pies

These meat pies are one of the most famous food items in Lebanon. As a child, they were my favorite type of โ€œPizzaโ€. I still have fond memories of this one time when my father took me and my mom with him to Jbail and got us the most amazing meat pies that I have ever had from this little tiny shop by the side of the road. Ever since I was determined to achieve the same taste that my memories always take me to whenever I think of meat pies. I believe that I came pretty close to the taste. The secret is in the meat mixture, and the exciting thing is that these ones are gluten-free.
