Gluten Free Coffee Mug Cake – Dairy Free – Vegan

This Gluten Free Coffee Mug Cake is moist and delicious. It comes together in less than 10 minutes, plus it’s vegan. If you are a coffee lover, you’ll definitely love this cake. 

I have to confess. I am not a coffee lover, but I find this cake to be super delicious. Go ahead. Judge me if you want. Here it comes. I make my coffee mug cake with decaf coffee. Yup.

WHAT TYPE OF COFFEE SHOULD YOU USE?

There are several reasons why I make this mug cake with decaf coffee. First I really hate the taste of caffeinated coffee. The only coffee that I can tolerate is Nescafe Taster’s Choice House Blend. We don’t have a coffee maker at out house, so we always use instant coffee. My husband hates percolated coffee.

The second reason why I cannot tolerate coffee is literally because I cannot. Somehow I always end up with a stomach pain after having caffeinated coffee. I Can’t explain it, and I don’t know why. Anyhow, for this reason I always use the decaffeinated version of Nescafe Taster’s Choice

But seriously, this gluten free coffee mug cake is so delicious, and it is super easy to make.

If you don’t like instant coffee you can use brewed coffee or espresso. I can’t even tell you the difference between brewed, espresso, or percolated because I am not a coffee expert. This is why I chose the term percolated coffee in my recipe because I thought that would make sense to most people.

In this recipe, I suggest to use 5 tablespoons of boiling water and half to one tablespoons of instant coffee. If you do not want to use instant coffee, and would like to use your favorite style of coffee, simply replace the 5 tablespoons of boiling water, and the amount of instant coffee with 5 tablespoons of any hot fresh coffee of your choice.

You can make the coffee as strong or as light as you prefer. Just remember that this will affect the taste of the cake. On the rare occasions that I make coffee, I make mine strong. I also like my mug cake to have a strong coffee taste.

Coffee is something that you can play around with in this recipe until you get your desired taste. So feel free to adjust the strength of the coffee in this mug cake recipe.

CAKE ADDITIONS

Of course, you can add a lot of things to this cake such as slivered almonds, pecans, dried cranberries, and so on, but the things that I suggest to add in the recipe are dark chocolate chips, and golden raisins. I find that these are great with this cake, and the chocolate gives the cake a creamier, richer taste than it would have if not added.

I do not mention to soak the raisins in the recipe, but if you are adding any form of dried fruits, you can soak them in hot water for 5 to 10 minutes before adding them into the mug cake. This will allow them to incorporate better, and not sink into the bottom. However, I have not ran into this problem when not soaking them before I add them to the cake.

WHAT TYPE OF FLOUR SHOULD YOU USE

I have only made this recipe with my own gluten free all purpose flour mix. So I cannot promise you that it would work with another gluten free all purpose flour mix, but I can promise you that one day, I will be trying most if not all my recipes with store-bought all-purpose gluten free flour.

You can probably try this gluten free coffee mug cake with another gluten free flour mix if you chose to, but I can’t promise you that it would come out the same. I do encourage you to make it with my Gluten Free All Purpose Flour Mix. It is super easy and quick to mix together.

Another type of flour that you are going to need is coconut flour. This is going to play a big role in the consistency of the cake. It will also provide the cake with a Magnificent taste. Coconut flour is so aromatic, and therefore, makes a great addition to any baked goods. Do not be fooled though. It will not taste like coconuts. So even if you do not like the taste of coconuts, you will love this mug cake.

SALT AND SUGAR

I mention to add only 2 tablespoons of sugar into this mug cake, and I find that this is the perfect amount especially with the addition of dark chocolate chips and raisins. However, if you like your coffee mug cake to be sweeter, you can adjust the amount of sugar to your liking. It will not affect the recipe that much if you add a little more sugar. Just don’t add half a cup of sugar!

Salt is used in many baked goods. It is added as a flavor enhancer. The amount that is mentioned in the recipe is not to make the cake salty, but it is simply there to bring out the flavors of all the other ingredients making the mug cake even that much more delicious.

The salt that I use in this recipe is regular table salt. I haven’t tried it with any other salt, so I cannot promise you that it will taste the same if you use a different salt. It is also worth mentioning that not all types of salt have the same level of saltiness.

HOW BIG OF A MUG SHOULD YOU USE?

First, always make sure that any mug or plate you use is always microwave safe. Using anything else than a microwave safe utensil can be very risky as it may get too hot, break, or even cause the microwave to catch on fire (ex. if it has a golden rim).

I remember the first time I used a microwave, and I put my mom’s gold edged plate into the microwave. That was a fun day. Lot’s of sparkles were happening in there.

It is always safe to err on the too big side than on the too small side. I encourage you to use a large or even a giant mug when making any mug cake. If you use too small of a mug, most of the cake might end up spilling out of the mug and onto the microwave.

In addition to using a large mug, I also encourage you to place the mug onto a plate when putting it into the microwave. Just in case if any spills occur.

If you don’t have a large or giant mug, you can use a microwave safe cereal bowl.

HOW LONG TO COOK THE MUG CAKE

Every microwave is different. My microwave wattage says that it has 1700 W input and 1100 W output. The output is the energy used to cook the food inside the microwave. The input is how much energy intake the microwave requires in order to function.

At 1100 Watts, I cook the mug cake for 1 minute and 30 seconds. I could probably cook it for 5 more extra seconds, but I like it to be a little moist.

You will need to cook it for a longer amount of time if your microwave wattage is lower than 1100. The amount of time required to cook this mug cake is between 1 minute and 30 seconds, and 1 minute and 45 seconds. It may still take a bit longer if your microwave wattage is too low.

I suggest you check your mug cake for doneness even if you are not sure that it is done. It is better to undercook it, and then cook it for a few extra seconds, than to over cook it and have a dry cake.

SERVING THE MUG CAKE

You can serve this gluten free coffee mug cake either warm or cold. Make sure to give it a few minutes to cool when it first comes out of the microwave because it will be scolding hot.

In my humble opinion, the best way to eat this mug cake is while it’s warm as the chocolate is still slightly melted and creamy. The flavors meld in together and create the most amazing cake experience. You can then top it with a bit of whipped coconut cream or any dairy free cream option that you prefer.

Equipment

  • Small bowl or coffee cup

Ingredients
  

  • 1 tablespoons dark chocolate chips optional
  • 1 tablespoon golden raisins
  • ¼ cup Chantal’s all-purpose gluten free flour blend
  • 2 tablespoons sugar
  • 1 tablespoon coconut flour
  • 1/8 teaspoon salt
  • 1/8 teaspoon baking soda
  • ¼ teaspoon vanilla extract
  • ½ to 1 tablespoon instant coffee
  • 5 tablespoons boiling water or you can use 5 tablespoons percolated coffee in place of the instant coffee and water
  • 2 tablespoons vegetable oil or melted coconut oil

Instructions
 

  • Mix in the desired amount of instant coffee into the boiling water.
  • Add in all the dry ingredients into a large microwave safe mug, except for the chocolate chips, and raisins. Mix to combine.
  • Add in the hot coffee, vanilla, and vegetable oil. Mix well to remove any clumps.
  • Add in the chocolate chips and raisins into the mix, and give everything a quick mix. You can sprinkle a bit more chocolate chips on top if you prefer.
  • Place the mug onto a microwave safe plate, and place it into the microwave. The plate is there to catch any spilling that might occur.
  • Microwave on high for 1 minute and 30 seconds to 1 minute and 45 seconds.
  • Serve warm or cold

Notes

Check your microwave wattage before you proceed with the microwaving process. Every microwave is different. Microwaves with higher wattages tend to cook the food a lot faster than those with lower wattages. Our microwave is 1100 W output which is the energy used to cook the food. At that energy level, I cook the mug cake for 1 minute and 30 seconds.
